There are amazing parents in this world who carry snack pots around full of pre-washed and chopped up fresh fruit and veg. I am not one of those parents. Another of Queen Nigella’s recipes, and one which is a kitchen cupboard essential. Essential in the sense that Waitrose sells many an item deemed as essential which you could probably survive a lifetime without, but your life is so much richer for including. I’ll be totally honest, this recipe has been adapted from a Nigella Lawson recipe I found online. The difference is hers is not dairy free and I’m adapting the original recipe for use in a small microwave/oven combi. Unfortunately in a 3 bed condo in Singapore the kitchen is not Nigella standard. We’ve been in this temporary apartment for a week, and whilst it’s great in many ways (loads of space, washing machine, pool, central location, maid service), it’s not home. Not our home at least.
